Unveiling a collaborative kitchen team, top PLATFORM traders - Gallus Pasta, Tiny Dancers and Ginger & Chilli will be firing up the grills and working side-by-side under PLATFORM owner, Scott McCormick. The new business direction allows for a modern way of working for traders in the post-pandemic hospitality industry.
Launching a new look and contemporary collaborative menu, the new PLATFORM has been completely reconceptualised to create a welcoming socially-distant state-of-the-art restaurant that includes a high-tech thermal scanner, custom-built ordering app, online bookings, along with daily allocated walk-in tables and more.
Meanwhile, in the kitchen, the new menu is dedicated to exciting street food flavours influenced from Asia, Italy to New York and feature dishes such as sticky Korean fried chicken bites or cauliflower bites, slow-cooked tender beef brisket curry with coconut, raita, chilli and Asian slaw, mouthwatering homemade pizzas and hand-cut plates of pasta from their international menu.
It’ll also be hard to resist scooping up a dessert from their nostalgic treats menu. Their PLATFORM piece made with rich peanut butter cookie, indulgent salted caramel ice cream, dulce de leche and praline is a naughty ice cream sandwich and a must-try.
Jules McGuire owner of Gallus Pasta and new PLATFORM chef said: “Switching from being a trader to developing the new menu has been a wonderful experience. We’ve got the opportunity to create the best post-pandemic dining experience and with our collaborative outlook, the street food menu offers something for everyone.
“When PLATFORM asked us to pivot our business, it was a dream come true. It’s a big challenge and we’ve all stepped up and can’t wait to get cooking!”
PLATFORM restaurant will operate every Friday and Saturday from 12noon until late as part of a transitional opening, complete with a fully licensed bar offering up a revolving list of cocktail classics, guest beers and a range of Scottish gins and whiskies, and local craft sodas.
Bringing a new dimension to online bookings and utilising the venue’s unique space, there is no time limit on tables and you can enjoy the relaxed atmosphere whether you fancy a pint and a natter with your pals or a lazy lunch with your family.
Table reservations have already been snapped up this month with Saturdays proving to be exceptionally busy. Guests can book a table online for three hours with the added option of staying on longer. The venue has specially allocated tables for walk-ins and drinkers who want to hang out and meet up with friends.
Along with numerous other safety measures including increased ventilation and contactless payments, the team has designed a one-way system to allow everyone to move around the building as safely as possible and will be offering table service to ensure social distancing.
Scott McCormick, owner of PLATFORM said: “Like most businesses, we have had to evolve and adjust to a new normal, and the opportunity to create Scotland’s largest casual dining restaurant and street food kitchen will hopefully be one of the few positives to come out of this pandemic.
“We’ve spent months planning and creating a new concept that we’re extremely proud of and we can’t wait to unveil PLATFORM to our guests.
“Our team are ready and looking forward to getting back to work in our new exciting PLATFORM restaurant.”
PLATFORM is set to open this Friday, July 17th in a phased opening and will see a full launch of the complete venue in the coming weeks.
