Online bookings are now live via www.themerchantsteakhouse.com where Glaswegians can be amongst the first to try indulgent smokey steaks and premium meats, cooked to perfection on The Merchant Steakhouse’s custom built charcoal Parrilla grill. The restaurant will officially open to the public next Friday 28th April from 12pm and operate Tuesday - Sunday, 12pm - 11pm.
Over the past weeks, the venue has undergone a complete transformation, working with Harris Tweed’s renowned textile team to create luxurious soft furnishings with a distinctly Scottish twist. Guests can enjoy Harris Tweed’s creative director, Mark Hogarth’s signature style on display throughout the lavish 80-cover restaurant and bar including snug corner booths, a New York style bar and Harris Tweed-topped chairs.
Ahead of their launch, The Merchant Steakhouse has also revealed their jewel in the crown - an intimate Chef’s Table for elevated private dining experiences located downstairs. Guests can enjoy theatre dining at its finest with Chef Selects signature dishes and cuts, matched with exceptional service.
Available for bookings of up to eight, Chef’s Table guests sit around a large mahogany custom built table where they can choose cuts of meat directly from the chefs themselves. Plus, as part of the VIP experience, bartenders will make bespoke drinks from a private cocktail trolley for guests.
Upstairs, moody interiors dominate to create an atmospheric and elegant dining room full of character and signature finishing touches, with the team working with designers Mark Brunjes and Stephen Boyd from CM Design, to create a luxurious new venue.
A striking neon gold eponymous logo, elegant artwork and an expansive ‘cow’ canvas print adorn The Merchant Steakhouse walls, with mood lighting and comfortable button-down leather-backed colourful booths providing the perfect backdrop for date nights or those late-night cocktail catch ups.
An eye-catching granite topped, copper fronted New York style high-top bar will serve up craft cocktails from expert bartenders including classics like Negronis, Sidecars and Aperol Spritz. Sip on The Merchant Steakhouse’s own cocktail creations including The Tashanate, made with Dark Rum, Dry Vermouth, Cinnamon Syrup, Passionfruit and Cardamom Bitters, try out a Cherry Old Fashioned with Bourbon, Maraschino Cherry, Bitters and Sugar or a sweet Strawberry & Basil Bellini.
The restaurant will feature eight premium cuts of Aberdeen Angus beef hand selected by craft butchers, dry aged for up to 45 days, direct from Millers of Speyside farm in the Highlands. Each cut will be hand selected before chefs carefully grill over flaming hot oak charcoals on a custom built, Argentinian-inspired Parrilla grill, set to lock in extra layers of smokey, rich flavours to the meat.
With sleek, stylish interiors, The Merchant Steakhouse will be a welcome addition to Glasgow’s lively Merchant City for an unrivalled modern Scottish dining experience, with dry aged smokey Scotch steaks, sophisticated cocktails and the best of seasonal Scottish fare and seafood on the menu.

A new venture from Bow Hospitality, the team behind popular venues Mezcal and Saki Maki, The Merchant Steakhouse will bring 30 full time and part time jobs to the area, with a capacity of 80 covers. The restaurant will officially open from Friday 28th April from 12 noon until late and operate 6 days a week.
