The 160-seater Merchant City bar and restaurant, perched eight floors above Candleriggs Square with panoramic views of the city, is ripping up the rulebook on strict 90-minute to two-hour bookings. From Thursday September 18, the bar is launching The Third Hour, a late-night sitting that lets guests stay put, enjoying drinks with their friends, until close with table service all the way through.
Diners sitting down as a group after 7:30PM can request ‘The Third Hour’ while booking, and they will be able to enjoy the table and SiSi’s hospitality for the rest of the night.
To sweeten the deal SiSi has created a secret cocktail only available during The Third Hour. The exclusive Patrón Paloma with grapefruit is a vibrant tequila mix that costs just £5, will be available for only those who are part of the new late-night club. Guests can also take part in a SiSi card-pack game, with the chance of winning their first round of drinks.
The Third Hour will be soundtracked by a rotating line-up of DJs, including Telford, Butho The Warrior, Craig Moog, Charlotte, Babyccino, Ali Ooft, Colin O’Hara, Matt Jungle Hussi, Kirsten and Harri.
Claire McIlveny, General Manager at SiSi Rooftop, says the idea came from her experience working with frustrated diners during her career.
She said: “During my time working in hospitality, I have heard countless diners say they wish they could stay longer to enjoy their night but cannot because of strict time limits, especially at weekends.
“The Third Hour is about giving guests space to settle in, bring friends along and turn the rooftop into the whole night out.”
SiSi Rooftop Bar Manager George Collinge added: “We wanted a drink that feels like part of a secret club, something you can only unlock if you know about The Third Hour. The Patrón Paloma is crisp, refreshing but more than that it is a little hidden ritual. It is not on the regular menu, it is only available to those who stay late, and that is what makes it special. It is the kind of cocktail that makes people feel they are in on something exclusive.”
Since opening earlier this summer, SiSi Rooftop has made waves with its bold Mexican-American menu, live music and sweeping skyline views. Now, with The Third Hour, it is inviting Glaswegians to make a whole night of it with no clock-watching required.
